About Chicken Biryani Cut

Chicken biryani cut is jointed into smaller, more uniform pieces than a standard karahi cut, so that every piece cooks through in the same amount of time as the rice layered around it. Using the wrong cut for biryani — pieces that are too large or unevenly sized — is one of the most common reasons home-cooked biryani ends up with undercooked meat in some pieces and overcooked, dry meat in others. Our biryani cut is sized specifically to avoid that problem.

Cut & Portion Information

Chicken biryani cut is prepared from a whole chicken and jointed into smaller, evenly sized bone-in pieces — generally 12–14 pieces per kilogram, noticeably smaller than a karahi cut. A 1kg order is typically enough for a biryani serving 5–6 people, depending on how much meat per serving you prefer.

Bone-In, Skin-On for Traditional Biryani

This cut is bone-in and skin-on by default, matching how biryani is traditionally prepared in Karachi — the bone and skin both contribute flavor to the masala the rice is cooked with. Skinless pieces are available on request if you prefer a leaner biryani.

Minimum Order & Preparation Options

Minimum order for chicken biryani cut is 1kg. Pieces are jointed to a smaller, biryani-appropriate size as standard. If you're making a boneless biryani style, we can also prepare boneless chicken cubed instead — just ask.

Recommended Dishes

This cut is made specifically for chicken biryani and chicken pulao, and works well in any layered rice dish where even cooking between meat and rice matters.

Cooking Recommendations

Marinate the chicken in yogurt and biryani masala for at least 30–45 minutes before layering with rice — this is especially important with a leaner bone-in cut, as it helps keep the meat moist through the dum (steaming) process. Because the pieces are smaller than a karahi cut, they cook faster; avoid over-marinating with too much acid (excess yogurt or lemon) for long periods, as it can make the meat mushy rather than tender.

Storage & Freshness

Refrigerate immediately and use within 24 hours for the best biryani result, since freshly cut meat holds marinade better than meat that's been sitting. It can also be frozen for up to a month — thaw fully in the refrigerator before marinating.
