About Mutton Chops
Mutton chops are cut from the rib section, prized for their tenderness and the rich flavor that comes from the small amount of fat running through and around each chop. Because they're a premium, occasion-worthy cut, we're careful to portion them evenly so each chop grills or sears at the same rate, rather than ending up with a mix of thick and thin pieces on the same skewer or pan.
Cut & Portion Information
Mutton chops are cut from the rib rack into individual bone-in chops. A 1kg order typically yields 8–10 chops, depending on size, enough for 3–4 people as a main course at a BBQ or dinner. If you're hosting a larger gathering, order in multiples and we'll cut them to the same consistent thickness.
Bone-In by Nature
Mutton chops are inherently bone-in — the rib bone is part of what defines this cut and is left in for both presentation and flavor, as the bone conducts heat differently to the meat and helps keep chops juicy on the grill. This isn't a cut we prepare boneless, since removing the rib bone would essentially turn it into a different cut of meat.
Minimum Order & Preparation Options
Minimum order for mutton chops is 1kg. Chops are cut to a standard thickness suited to grilling and pan-searing. If you prefer thicker chops for a slower cook, or thinner ones for a quicker sear, mention this when ordering and we'll adjust accordingly.
Recommended Dishes
Mutton chops are best known for grilled mutton chops and pan-seared chops, and are also used in mutton chops karahi and other special-occasion dishes where the rib chop is the centerpiece rather than being broken down into a curry.
Cooking Recommendations
Marinate mutton chops for at least a few hours, ideally overnight, with a yogurt or vinegar-based marinade to help tenderize the meat before cooking. Sear on high heat for a good crust, then finish on lower heat or in the oven until fully cooked through — mutton should be cooked all the way through rather than served pink, unlike some other red meats. Resting the chops for a few minutes after cooking helps keep them juicy.
Storage & Freshness
Refrigerate immediately after delivery and use within 1–2 days, or marinate and freeze for up to two months — marinating before freezing can actually help flavor penetration. Thaw fully in the refrigerator before cooking.
